How to Check Almonds (Badam) Before Buying
Good almonds are plump and uniform, with a smooth unbroken brown skin, a dry feel, a mild nutty smell and a clean snap when bitten. Shrivelled, dusty, oily or bitter-smelling almonds are old or badly stored stock and should be avoided.
Quick checklist
- Uniform size and a smooth, unbroken brown skin
- Dry to the touch, with no oily film or stickiness
- A mild, nutty smell, never sharp, musty or bitter
- Snaps cleanly when you bite one in half, instead of feeling soft or chewy
- No insect holes, webbing or powdery residue in the pack
- Very few broken pieces or empty half-shells in the pack
- A clear pack date and the variety or origin printed on the label
Why almonds go bad
Almonds are rich in natural oils. When they are stored warm, damp or for too long, those oils oxidise and the kernel turns rancid. Rancid almonds smell sharp or paint-like and taste bitter. Moisture also invites fungus and insects, which show up as webbing, holes or a powdery residue at the bottom of the pack.
The bite test and the water test
Bite one almond in half. A fresh kernel is crisp and breaks with a clean snap; the inside is creamy white and evenly coloured. A soft, chewy or yellowish inside means old or moist stock.
You can also soak a few almonds overnight. Good almonds swell evenly and the skin slips off easily. Kernels that stay shrivelled or smell sour after soaking are best not eaten.
How to store almonds at home
Keep almonds in an airtight glass or steel jar, away from sunlight and the stove. In Uttar Pradesh summers (often above 40°C) store larger quantities in the refrigerator, where they keep their flavour for several months. Always use a dry spoon.
How Rajput Farms checks almonds
Every batch of badam sold by Rajput Farms is checked against this list under the in-house Alpha Grade standard (look, smell, snap and pack condition) before it is packed.
Frequently asked questions
How can I tell if almonds are rancid?
Rancid almonds smell sharp, sour or paint-like and taste bitter. Fresh almonds have only a mild, sweet nutty smell.
Should almonds be soaked before eating?
Soaking is optional. Many people in India soak badam overnight and peel them because they are easier to chew; dry almonds are equally fine to eat if they are fresh.
How long do almonds stay fresh?
In an airtight jar away from heat they stay fresh for a few months; in the refrigerator they last longer. Smell them before use if they have been stored for a long time.
